Truly Raw Cheddar cheese was North America’s first truly raw, pasture fed cheddar cheese. Many “Raw” Cheese makers heat their cheese to pasteurization levels, denaturing enzymes and killing beneficial bacteria. They never heat their cheese over 104 degrees, so all the beneficial bacteria and enzymes are still intact, and the flavor is out of this world! There is also rarely any lactose intolerance symptoms with our cheese as it is still in its whole form.
The cheese is made using artesian techniques so they can ensure that there is quality in every bite! Handcrafted cheese: the whole process is about 8 hours where the cheese is warmed at a gradual rate, never going above 102 degrees and aged a minimum of 60 days, you will Truly taste the difference in quality! The cheese is produced from the best quality raw milk from pasture grazed cows at our on site creamery. No antibiotics, hormones or pesticides are ever used. Superior Vegetable Rennet, specialty cultures, and salt are the only ingredients other than delicious raw milk!
